Pneumonia sucks, paleo/Whole30/diabetes edition

Yep, being sick sucks, but I'm climbing out of the hole. I feel fine, but energy is low and desire for sleep is high. I'm hungry again, so I am eating real foods. I don't feel like cooking, but tough; if I want to eat right, I have to prep and cook. I'm re-committing to proper eating again and am happy to do it. Toast and ice cream were good, but they're not beneficial to living well. There's not a lot we can control in the world, but our food intake is something we can control, and I choose to control it. I'm back to my Whole30 eating with a little SWYPO included. Witness my breakfast - it would not be allowed on a strict Whole30, but it's okay for paleo. The ingredients are pure, but this could be thought of as a pancake.
One banana 2 eggs, a healthy dose of pumpkin pie spice, and cooked in a large pan with ghee on the bottom. That's about a tablespoon of coconut milk. Delicious. 

Control. I have it during the day and most of the early evening. I've been trying to go to bed early so I'm not left to my night eating urges. I'd rather read. 

Lunch was tasty for sure. Left over pork and green beans seasoned with Tessamae's BBQ sauce. I recently bought 2 more bottles and today realized I had a bottle already. Argh. I guess I'll be having BBQ sauce with a lot of stuff! There's no pork in my house without applesauce. Whole Foods has some really good organic applesauce that is unsweetened (365, I believe, is the brand.) It went really well with the lunch. I dipped every bite of the pork! I didn't finish the pork; there was a lot. I rinsed the remainder and let Abbey have it :) She's worth it.

Rockin pneumonia and boogie woogie flu

I'm a pretty hearty thing. I don't let much get to me. I've been working on this diabetes thing for a while now and making some progress. Right now, I can't take my metformin because I had a contrast CT and the iodine is tough enough on the liver that they don't want me taking the drug till the iodine is fully gone.

This pneumonia/pleurisy thing is interesting, though. It hasn't fully kicked my ass, but it has come close. I slept for 7 hours yesterday when I set my clock for 2 hours. Then, I decided to forego the pain medication and just take an Ambien last night so I could sleep, and sleep I did. Another 11 hours. I keep thinking I've got this thing licked and my body says otherwise. I'm hoping a couple more days of antibiotics will make a difference.

Yawns, deep breaths, and coughs still talk to me in the right breast, but it's not a stabbing pain anymore. A good thing!

I'm weaning off crap food that's delicious and not remotely nutritious and working back to real food. That included some cantaloupe this morning. It doesn't matter that I'm not really hungry. And I can't live off of food that appeals to me in taste; that's counter to healing and a breach in eating for diabetes. So, that's today's task - get back to the real world, even if my body is preferring to just be stagnant.

I will call Dr. H's office in the morning to see if they want me to come in earlier than Thursday. Not much anyone can do right now.

I'm way down on cigs and ready to toss them out again. That's long term goal number 1.

A touch of depression has set in today, but I'll try not to let that hamper things around the house. Richard goes back to working nights tonight and the house will be empty. I can have a private pity party later.

Update: I did go see Dr. H. He told me no exercise other than short walks when the day is cool at least until I see him again (July 7). I finished the antibiotics yesterday (June 29) and they seem to have done their job. We'll see how long it lasts!

Oooh, shiny object, or back to Whole16 in a bit

I spent a good part of Thursday in the ER. Wednesday night, I had severe right breast pain; not chest, breast. If it had been on the left, I'd have gone to the ER right then and there. Thursday morning, it was worse and I had barely slept a wink the night before, even after taking a couple Norco. The Norco actually didn't touch the pain. Fun!

I waited till 8 a.m to call my doctor's office. I asked if I should come see them or go to the ER. I knew the answer, but needed the okay from them. They said ER so that imaging could be done. I told Richard I was going. He had worked nights and was asleep and under the influence of Restoril. He couldn't drive anyway.

They took me right away and proceeded to rule out cardiac reasons for the pain. Their concerns after initial testing were pneumonia, pleurisy, and/or clots. A CT scan was done to look for clots and found pneumonia instead. The pain is the pleurisy, so I walked out with a dual diagnosis, but no clots, prescriptions for a powerful antibiotic and some pain medications. I called Richard to tell him the news. He was still pretty incoherent.

I took the prescriptions to the drug store and when I got home, the dog greeted me; Richard was still sleeping. He came downstairs after a while. He didn't remember either phone call or my telling him I was going out.

It's now a couple days later and I'm still not sleeping. I have a paradoxical effect with pain meds - they keep me up. I've read hundreds of pages in The Stand. Stephen King is a pretty good writer! My breast still hurts with deep breaths or yawns, but not with movements as it had before. I'm eating crap and need to stop that. Better eating will help and I think I might feel like cooking today. I'm still sweaty for a while and then chilly for a while, even with the AC on 71°. That will pass soon. It's the third day of antibiotics and they should start doing their job. I see Dr. Hoag on Thursday; I already had an appointment set.

Looking back, I had a chest cold a few months ago. Almost everyone I know had it at one time or another. It lasted for a while and Dr. Hoag gave me antibiotics for it. I was coughing a lot and even producing some yucky stuff for weeks after. I wonder if I have had this for a while and didn't know it. My diabetes has been wack and maybe it's been related to the pneumonia?

Overall, I'm not deathly ill but I am not well. I'm getting better, though. Sleep will help, good food will help, and the antibiotics should help. This too will pass. I'm a strong biotch and can handle it.

Whole16, diabetes edition, day 8 (Recipe - Banana/egg "pancake")

FBS 263, still not great, but more like me. Diabetes is a bullshit disease, but we'll get this figured out.

This could be considered SWYPO, but I took a chance. It was a nice change for breakfast. I would use this as a meal and not a snack. 

Banana Pancake Recipe
1 banana
2 eggs
About 1 tsp of pumpkin pie spice or apple pie spice
1/2 tsp of cocoa powder
ghee or high quality butter
teaspoon of chopped pecans
Coconut milk (optional)

Whirl the banana and eggs, cocoa powder, and spice in the Magic Bullet or blender. Melt the ghee in a pan on medium heat. Pour in the banana/egg mix. Sprinkle some chopped pecans evenly. Let it cook fully on one side and try to turn it whole. I'e never been able to do that! Cook on the other side. Slide onto your plate and add a blob of coconut milk. Eat while warm for the best taste. 

I made a side trip to Fresh Market after exercise to pick up vegetables, fruits, and eggs. Forgot the eggs, but got a bunch of fun other stuff, including an apple, half of which went into the Waldorf salad along with homemade mayo, lemon juice, chicken, lettuce, pecans, raisins, and a lot of yum. The lemon juice made a big difference; I didn't put nearly enough in the mayo yesterday. I was super hungry, so a big salad was perfect for today.

Whole16, diabetes edition, day 7

FBS 319, seeming to be directly related to high carb snacking last night. If I have a snack tonight, it'll be cucumbers. 

Same ole, same ole, but I added tomatoes to the pan and then my eggs on top. My asparagus are all gone now. Time to dip into the zucchini! I also cooked a couple chicken breast tenders yesterday to make sure I have decent protein around. 

I made a great Waldorf salad for lunch. Half an apple, half a chicken breast, lettuce, raisins, pecans, and cinnamon and......
MAYO! I made that just before lunch. I didn't use enough dried mustard or lemon juice, but it's serviceable. I'll check the ingredient amounts next time!

Ooops. I just looked up the recipe:
1 egg
2 tablespoons lemon juice @ room temp
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/4 cup plus 1 cup light-tasting olive oil (Not extra virgin. Try Filippo Berio or Bertoli.)
I forgot the salt, didn't put nearly enough lemon juice or dry mustard in it, and used less mayo than she calls for. I guess I'll pay closer attention next time!

I like the cauliflower and rutabaga mash with the hand blender better, but it was good nonetheless. There was a bit of meatloaf left over, so finished that up too.

Whole16, diabetes edition, day 6

FBS 363!!!! Heavy snack last night the culprit?

My favorite, and often eaten, breakfast. Pancetta (W30 compliant), asparagus, and eggs. 
Gotta get the BS down today and keep the momentum going. 

The rest of the day was pretty on target. I had salami, cucumber, and fruit for lunch, then fake pizza for dinner and banana/almond butter later. Serious focus coming up.

Whole16, diabetes edition, day 5

FBS 207, which is low for me. I've set the alarm for an after breakfast number. I've also lost a pound. Can I embrace the concept of eating like this all the time forever? Daunting.

I've been avoiding fried eggs because I don't eat toast. Well, I tried something new today. I spiraled a half sweet potato and sauteed it in bacon grease while the bacon finished cooking (separate pan, though). I sprinkled a little Parma on the sweet potatoes to elevate the taste just a touch. After I fried a couple eggs, I put them on the next of sweet potato hash browns. I say it was an A- success. The potato soaked up the yolk as it broke and it was very tasty. I will absolutely make this again. 

If you want to try the bacon I use, visit Wellness Meats sugar free section. I made a half pack for breakfast, but a third would have done for both of us. On first purchase, it's a wee bit pricey, but when you break it down in terms of excellence and lack of sugar or other nasty bits, it's a bargain. I cut it in half when it arrives (almost fully frozen) and freeze each half. My husband prefers it. I'm just happy there's compliant, sugar free bacon to eat!

BS 166 before lunch. What what what?

Genoa salami, cukes, and watermelon. I didn't feel like cooking. I'm curious to see how the BS is in two hours after the watermelon.

Whole16, diabetes edition, day 4

FBS 279 and down to 259 after breakfast.
And it was a wonderful breakfast. Eggs, asparagus, sausage, Parma and a side of pineapple. I'm using the Parma a bit more lately; it gives a nice little extra layer of flavor without adding cheese. I probably use a teaspoon or less, a few shakes. I'm finding I really enjoy it. The pineapple was frozen. I had a huge pineapple that I cut up and froze, eating some of it before it hit the freezer. I thought about whipping the frozen pineapple with coconut milk, and that's still on my agenda!

Overall, my blood sugar is trending downward, but not even close to a normal range. 
The blue line is average run. The arrow points to 6/11, when I started the Whole16. There is an improvement, but not that great. We'll see how it goes. The beginning of the graph was mid May.

I have eaten extremely low carb today, in addition to sticking to Whole30 style. Here's lunch:

Quick salad with leftover ham, trail mix, lettuce, and a dressing made out of coconut milk and frozen pineapple. I probably will add a touch of lemon juice to the next dressing trial. It needed a kick of sour.

Dinner was also pretty simple - W30 compliant meatloaf and some carrots. I'm not surprised that my after dinner BS was 200. With a paucity of carbs, it should go down. It is still not even close to normal, but it's low for me. I'm having a dried apple with cinnamon snack. 

I'm craving sweets and wonder if the low carb is the reason. I went to WalMart today to get lettuce and salad stuff, and did not buy junk. I literally looked away when I walked by the doughnut impulse display. 

Day 4 is in the books. I'm done for today.

Whole16, 'betes edition, day 3

FBS 259. Sigh. Meh, I have a good day ahead.

I have a couple zucchini that need to be eaten, so I sliced one really thin and cooked it with the bacon ends, took the bacon out of the pan, drained, poured off excess fat, then added eggs and Parma, and breakfast was made. The Parma adds a nice twist to the taste. It's nutritional yeast and has a wee bit of a cheese flavor. I use very little, as a spice, and it's all you need for the zing. It's another spice in my arsenal to remain clean, very clean, for the 16 days and maybe forever. 

A wonderful salad with lettuce, leftover ham, cucumber, hard boiled egg, and a bit of Wellness Meats paleo trail mix (W30 compliant). I was hungry enough to eat a horse, but I didn't have one so the salad had to do!

Whole16, day 2, diabetes edition!

FBS 268

Just plain old not hungry this morning and nothing seemed appetizing. I cut up an apple and warmed up leftover sausage as a compromise. I'm sure I'll have salad and vegetables for lunch as I'm going out to eat. 

Stefanie and I caught up in Virginia Beach to go to lunch at Whole Foods, shop, and then kind of last minute, went over to Fresh Market too. They had a hot food bar in addition to their menu, and lo and behold, a W30-compliant lunch was had. The talapia was seasoned without sugar or forbidden stuff, and man, it was hot. The green beans were okay; I'm not a crunchy green bean person. The fried plantains were okay too. I think I liked them! I spent too much money at both stores and then headed home with NO STOPS! No soda. No snack. I'm committed. 

The beef loin I purchased was Fresh Market was way too thickly cut! Grrrr. I suffered through eating one for dinner, though, with a crapload of mushrooms and left over cauliflower mash from last night. I used a little bacon fat in the pan and it made a really nice overall flavor for the 'shrooms and steak. 

My package from Wellness Meats came. I'm set with pork, beef, and fish for about 2 months! 

Onward with my Whole16, diabetes edition.

Whole16, Day 1, Beatin' the 'betes edition

I'm ready. The kitchen has been cleaned of yogurt, cheese, and all that stuff. I've accepted the challenge to eat Whole30 clean for two weeks. So here we go!
And so it begins. Eggs with tomatoes, asparagus, Wellness Meats bacon ends, and kiwi (which I couldn't finish). For those keeping score, NO ketchup.

Whole30 and paleo style eating are amazingly delicious. A friend asked me today, "will you have to eat like this forever?" My direct response was, "maybe!" And if I do need to eat like this, then that's what I'll do. But for today's dinner, I had some Wellness Meats sausage, applesauce, and some creamed cauliflower with coconut milk and ghee. 

I'm focusing 100% on Whole30 style eating for the next 16 days. I will take my blood sugar and if it rises too high, I'll get help; I'm not ignoring the diabetes. I'm trying to give this a textbook try for this hail Mary to learn whether food is my problem or if my pancreas is failing. And on we go!

Back to Whole30

Copied/pasted from an email I sent my sister 'cause I didn't want to type it twice:

He's concerned, as I am. There are options - first is more meds. If my pancreas is failing, they won't help and they also tend to increase weight because you have to eat when your blood sugar is low. It's just funky. Second is to hard core the elimination diet again (no potatoes or cheese, which are the biggies I have been eating) for 2 weeks. He knows I'm able to do the W30 thing, so we opted for that. I'll go back with blood sugar readings and my graph in 2 weeks. I think I mentioned that I'm pretty sick of being me right now. I got a little teary at the office. I'm totally in the throes of verge of tears all the time the last four or five days, so that didn't shock me. I didn't want it to happen, but it did. I'm usually chipper girl and right now, I'm not. This too will pass!

Accountability week continues - diabetes is real

This week has been pretty good. Blood sugars have been all over the place. My doctor's office finally responded and I'll be seeing him tomorrow. The results could range from try harder to add another med to insulin to see an endocrinologist. Regardless, something has to change.

Food this week has been stellar 5 out of 7 days if I'm completely honest. Friday and today, I've been deep in a funk that I'm ready to get out of. I went out with friends last night, but other than that, I worked or slept. I have exercised more than I signed up for this week, by choice.

I'm just in a bleh space. I know no miracles will occur tomorrow. I also know that a lot of the impetus is on me. Weight loss is huge. I must lose the last 40 pounds. Eating right is huge. If I have to make some changes here and there to make sure I get a high protein to low carb ratio, then that's what I will do. I need to give up the last few cigs I smoke. Sigh.

Accountability Week, day 4

Still tracking every morsel and working on bringing the BS down. My fasting was within my range, 237. Not good for a normal person, but not the end of the world for me. I wanted a light breakfast, but also wanted to follow the match carb with protein method, so here it is:
A wonderful banana with some organic cottage cheese. It hit the spot. 

I'm off to the pool in a bit. Curious how my BS reacts. Monday, it was 396!!! after exercise. That made no sense and it's what drove me to send my numbers to Dr. H.

My blood sugars, even after exercise and pretty damned perfect eating, are all over the place and it's pissing me off. Not much I can do but continue as I'm doing until my next doctor's appointment. I'm even wondering if I'm passing into type 1 diabetes.

Fucking insane!

For today, we begin anew with testing and eating properly. 
Eggs, asparagus, pancetta, asiago, organic ketchup. 
ADA says 2-3 carb servings per day, 1 serving = 15 grams (I think it's too high, so try to stay under)
This breakfast was 11 grams of carbs and 20 of protein. The sugar in the asparagus and organic ketchup is the same - 3 grams. That's a) how little sugar there is in the ketchup and b) how much sugar there is naturally occurring in vegetables, not just fruits. 
I'm currently sort of obsessed with keeping an eye on carb/protein ratios and exercising and getting enough sleep. I have a way to go. Wonder if I need an endocrinologist at this point? Am I headed for type 1 with insulin? What else can I do to improve this situation? 
For now, I will continue with paleo/primal eating and making efforts toward overall good health. 

I ended up sending my BS log to the doc. We'll see if they have any suggestions. I also had a snack of nuts and just finished my lunch of egg salad with olives and shredded lettuce:

Dinner was kind of okay. I tried baking the sweet potato and then "frying" it in a pan with my eggs. Won't do it again, but I'll keep trying. So far, I like them riced. Might have to stick with that. I ate about half of what's showing. I covered the eggs and took a bite of egg with each bite of sweet potato. No ketchup :)

Fully accountable today. I'm waiting to see if Dr H has anything to say about my blood sugars. Interestingly, it did read at 177 after lunch (note the lack of carbs with lunch, a grand total of 15 for lunch, 11 for breakfast, and 20 for dinner). We'll see how it goes.

Accountability Week, day 2

Cheese bubble with pumpernickel and a bowl of gross carrots. I usually love those stupid carrots, but they were lukewarm and just icky. Gotta have veggies, though. I ate about half of them and will warm up the rest for lunch. Almost burned the cheese bubble under the broiler! It's Trader Joe's organic cheddar. 
Lunch part 1 - steak, green beans, mushrooms, and onions. 

Banana and full fat Greek yogurt for part 2. 

Dinner and a mushroom blend (from Trader Joe's). I did drain off the fat/liquid before eating. It was really good. I seasoned it with chives and the scampi seasoning. 

Richard had some ice cream last night and I had 3 bites.

Accountability week, Day 1 (Paleo/Primal)

Seven days of full accountability starts today. Between the oral surgery and the birthday party yesterday, I need to rein it in and the best way to do that is to journal every single bite and make sure they fit my particular needs. My waistline and my blood sugar will be very happy. Pact App, My Fitness Pal, and planning will be my tools. Execution is a matter of following through with my planning. Let's start here:

Very late breakfast, so will call it brunch. Zucchini cooked with the pancetta, two eggs, 1 tablespoon of shredded asiago, and some organic ketchup to round it out. (Take out the last 2 ingredients to make this W30 compliant. Otherwise, it's primal.) That's the way it's done. 
Not really lunch since it's so late, but high protein Greek yogurt and some peaches. 
Dinner sort of sucked. Trader Joe's had romanesco and cauliflower frozen in a bag, so I thought I'd try it. Meh. I defrosted some beef to make a sort of Hungarian goulash thing, but it turned out to be ground beef. I made do and added onions and broth I had frozen. It was pretty gross. So, dinner did suck, but there you go; they can't all be perfect. 

I'm good with the way today's intake has gone. I'll have some fruit and protein for snack later. Blood sugar will be checked around 8. And on we go to day 2 tomorrow.
