Welcome back kale!

I've not had my old friend, kale, with eggs in a while. It's time! I found some in a small quantity recently and picked it up. After sauteing the mushrooms with the pancetta, I whirled the kale and eggs in the Magic Bullet, poured that in the pan over the mushrooms, and added a bit of goat cheese (the white in the picture). I bought some crumbles for occasional use and it's delicious - tangy! It was a great breakfast and makes me want to have it again tomorrow. Maybe I will. (Not Whole30 because of the cheese.)
