Broccoli slaw makes vegetables for breakfast pretty easy. Saute it and add eggs and it's amazing. This batch has chunks of broccoli in it as well. I think I prefer it without those. Bacon made it that much better.
And to add to a small loss, a delicious breakfast. No more holiday mayhem, not that I had any wassail to begin with. Even the Whitman sampler and Godivas are gone. I had a lot of help this year with the eating. And there was some generous tossing in the trash can. Hope you're doing well with your holiday mayhem!
Simple - eggs, zucchini, and sausage. Mahvelous.
Lunch! I looked for chicken tenders, but alas, the cupboard is bare on that front. I do have a bunch of beef filets though, and so that's what I had.
Mushrooms, fire roasted peppers, and the other half of my zucchini went really well with the filet. I added some goat cheese to take it over the top and voila, lunch is done.
I'm feeling it, y'all. I'm back.
Dinner was amazing. I put a pot roast in the crock pot much earlier today, dumped in a can of tomatoes and a jar of bruscetta sauce and that was that. After lunch, I had some leftovers - mushrooms - so in they went. That cooked all day and then I fried some taters for my husband and warmed up last night's broccoli for me. I ended up mixing it all up on the plate and it was delicious. The spices in the bruscetta and the touch of olive oil made for an interesting taste blend. I'm a big fan of cooked tomatoes, so I am a happy camper. I'll have leftovers of that for a couple days, though the beef itself is just about gone. There is an apple or a banana for later; I haven't decided yet.
And there's day 2 of recapturing my paleo spirit and lifestyle. It's not a difficult way to live, but it does take a modicum of planning and some decent foods, not to mention creativity. It could get very boring if I let it, but that's when I mix it up a bit and throw in ingredients that even I was not expecting. I gave two friends mini cans of coconut milk to try today. One said she makes smoothies with a little bit of yogurt and I thought the coconut milk would make a nice substitute for that. The other was just interested. Sharing the wealth!
Tomorrow is a new day and an exercise day to boot. I don't feel as bloated and fat today, though really, not much has changed other than food for 2 days. Monday's fast approaching!
The first step toward wellness and self-care is one you take with eyes wide open and so it begins.
Successfully fried eggs! A little avocado (didn't eat it all), pancetta, and asparagus rounded out the plate. My daughter picked up the pancetta at Whole Foods for me. They never came through with their special order for me that was made in September. After several tries, I was unable to get the order taken care of. She jumped in and made phone calls and a Facebook post, and boom! Free pancetta and coconut milk. She doesn't take no for an answer, that one.
Lunch is interesting, no? Plantain cakes with apple butter, carrots with ghee, and organic hot dog with relish. It make take me a few days to get vegetables truly prepped in order to have them with every meal, but I'm getting there! I wish I could say I was super full and didn't want something sweet right now, but that would be a lie. This is the part one has to work through when detoxing from a few weeks of eating the SAD. My mental determination is fully engaged and I'll detox just like anyone else - a wee little bit of aggravation, but in the long range, I lose nothing; I only gain better health.
My son brought us a pound of farm fresh ground beef. I made burger patties with it tonight. Oh jeepers. That's some good stuff. Deep flavor, perfect texture, and just enough fat to keep it moist. I split a slice of cheese with my daughter and let it melt slowly on the burger (nice spreading out!). I had cooked the fire roasted peppers with the burgers, but added them to the left over carrots from earlier today. I included the other piece of avocado, splitting that with my daughter too, and cooked up a pot of broccoli. If I was still doing thumbs up, this would get a 5. A nice array of foods and tastes. I had a banana and some fruit thingies for a snack and I am done.
I'll be heading for bed in an hour and will spend my time easing back into a 10 p.m. bedtime. That's as big a goal for me as general health and weight loss.
My plan for tomorrow includes some exercise, either here, at the pool, or walking at Warhill. I'm looking forward to the movement. Occasional movement here today just hasn't cut it. Plus, I was really tired all day. The fatigue will improve as I continue to move forward too. I feel super fat today. This is temporary. I know that, but I need to feel what I feel so that I can deal with what needs to be addressed.
Obsession is the key for the next week or so, and then routine will kick in again with little effort. I'm in control of my health, not anyone else. What works for me is paleo/primal and close to Whole30 living, not just eating.
Friday has been spent either tossing out or finishing the last of the holiday food in the house. We also stopped by Food Lion and picked up some extra vegetables and fruit. Saturday morning will bring light and love, and a return to good eating and self-care.
The why is easy - overeating, including late night eating, less optimal self-care, lack of sleep, and choice of foods.
The what to do is also easy - get back to my center and end the late night eating.
The how is this - Get back to paleo eating immediately. The holidays are over and there are no socially acceptable excuses and it's on me and only me, as it always has been. So join me for more food porn and accountability. Here I am. Bare to the world.

My new knees did me proud. We, my husband, my son (Tom), and I, participated in the Christmas Town 8K Dash yesterday. Months of training, a 3-year-old knee and a 2-year-old knee, lots of family and friend support, and determination made it all possible. Abbey has been my training partner. We walked 2-1/2 miles two or three times a week, and made it to 4 miles once.
At about the 0.1 mark, I stopped and took a picture of the finish line. I was just about in tears with amazement!
And here we are, not too much worse for the wear.
But back to today. Whew. I'm happy to get back into decent eating. I'm taking a day off from exercise as my older of the two new knees is still a bit on the angry side this morning. It'll be fine tomorrow and back to the pool with me it will be.
The Christmas Town Dash was rescheduled and tomorrow is the day. I know I will make it the 5 miles, but it's still one of those things that has me semi on edge. I'm not the first person with new knees to ever do this!
Food has been meh the past few days, not 100% on and not 100% off. We're going for pancakes after the race tomorrow and that's that.
Other random thoughts have been trending toward frugality, sewing, and Christmasy things.

I feel good today. No overstuffed feeling. No bloat feeling. Body feels in balance.
I have to give this a 5 thumbs up for creativity in addition to taste. I have one egg. I have a bit of broccoli slaw. I have frozen plantain cakes and some pancetta. I tossed the broccoli slaw in the pan with the pancetta as it cooked. When the pancetta was almost done, I piled up the broccoli slaw and cracked my one egg on top. At the same time, I warmed up the last of the plantain cakes in the toaster oven. I cooked the egg through and had a really nice fritter. I added apple butter to the plantain cakes (the equivalent of 1 egg and 1/2 plantain) and then plated the whole mess. It was delicious and filling. Lots of flavors. There's never a reason to not have a good breakfast, even when you're scouring the refrigerator shelves looking for just the right blend. I'm ready for water exercise now. Yup, I am.
It's raining, so no walking. I can't get out of an hour of work at 10 a.m., so no pool. That means I'll carve out time to do an exercise DVD. Can't stop me now!
Veggie hash - Shredded celery root, shredded sweet potato, garlic powder (about 1/2 tsp; I shook it on till I thought it was enough), salt and pepper, and ghee (or another healthy fat of your choice, just enough to cover the bottom of the pan) - slow cook in a pan and then when veggies are tender, turn the heat up a bit and brown on both sides. You can do this with any root veggies or not so root veggies if you like.
I had the hash with a couple fried eggs. I put the eggs on top of the hash after I took the picture. I rounded it all out with the pancetta. I like a lot of pepper on my eggs. The whole meal was amazing and flavorful.
Organic, unadulterated hot dogs, plantain cakes, and unsweetened organic apple butter. I'm not a big fan of hot dogs, but sometimes, they're pretty good.
What bugs me with my personal addiction is that when I have something to eat, it stimulates my "MUST EAT ALL THE FOOD" response. I will spend the next half hour or so fighting that demon, but fight I will. I'm a junkie and I have to get to where I don't need my "heroin" as much as I once did. Wonder what normal feels like.
P.S. I survived the above this afternoon.
How about some cod with lemon pepper, leftover sweet potato/cabbage mash, and some broccoli slaw with onion added and sauteed in the pan which I used to cook my husband's steak? How about that, huh? Excellent tastes and textures.
Sausage is usually not my thing, but the sausage from the farmers market is amazing. Couple that with sauteed zucchini and white onion and two eggs, and you have a really nice breakfast. I'm ready for the day now.
Walked 2.5 miles.
Filet along with onion/mushroom blend. The steak was a touch overdone, but otherwise, lunch was nice. Just what I needed after a long walk and a short nap.
Excellent breakfast - left over egg muffins with zucchini and sausage, along with cauliflower/sweet potato mash from last night. Weight was up 1 pound. I doubt it's an issue, but will watch it. I do have a bit of weight to lose, but not gonna fret just yet. I may later, but oh well :) Good food and good exercise.
On a side note, the 8K is Sunday. Today was to be a 4-mile walk day, but it's raining. Rain is also forecast for Sunday. Neither my husband nor I have any intention of walking in a winter rain. The good news is that I am able to walk that 8K whether I do it or not, and that's beyond comprehension. From almost unable to walk at all to walking 4 miles. How cool is that?
Weighed today and am not happy, but am not going to let it get to me. It's a go on this Whole21.
Sausage bits in eggs along with asparagus sauteed in bacon grease. A good way to start the 21 days.
I can't say I haven't been tempted today! I took my sister to the airport - Wawa on the left, home of 2-packs of Entenmann's chocolate donuts. Nope. Dropped her off - stores, fast food, all over the damned place. Nope. My plan was to go to Food Lion and get a few things on my list. That I did. Then I came home and made this:
Broccoli slaw (broc stems, carrots, purple cabbage), chicken tenders, and ghee with some seasonings! Wowsers. I'm in love. I had a couple of plantain patties with sweetener-free apple butter on them. Now I stop being famished. Good stuff.
Cauliflower and sweet potato mash made with ghee and coconut milk, a wonderful hamburger, and a few onions sauteed in the pan. Those three slivers were left over from an onion I cut up for my husband for his burger on a bun. I never did like raw onions, but when I saw those, I grabbed them and tossed them in the pan! I have some fruit for later if I get hungry, but who knows?
