Rarely do I rate a meal a 5, but this one is a 5 in many ways. It is complete, it is delicious, and well, it was easy to make. These are topped with a blop of organic, unsweetened apple butter. The apple butter is very concentrated in taste, so very little is needed.
I made a plate of asparagus separately to round out the plate.
Banana cakes/patties - W30 compliant
1 banana, riper the better
1 tsp+ apple pie spice
Melt enough ghee or coconut oil in a medium-high heated pan to cover the bottom. Blend the above in a food processor, blender, or Magic Bullet until smooth. Pour the batter either in 4 parts or in 1 large cake into the pan. When it starts to bubble on the top, it's time to turn. You can turn the individual cakes or cut the big one into 4 pieces with your flipper and turn them. Cook for a while on the flip side. I usually flip them again to check for doneness. You can serve them up and eat them as is or with a compliant topping of your choice.
I blew it the rest of the day after going to a luncheon. Day 1.1 begins tomorrow. Then will follow days 2.1 and 3.1, and on with days 4-30.
