Whole Thanksgiving Day 1

First, here's a look at last night's dinner. It's adapted from Sweet Potato Power.

Sweet Potato Cups Au Gratin
1 Japanese sweet potato sliced thin
2 tbsp shredded asiago
2 slices ham (presliced good quality sandwich ham or a slice of meat of your choice)
1 tsp ghee
1 egg
Silicone muffin tin liners. Layer sweet potato with cheese. Add ghee broken up into 6 pieces to the layers. Add the ham to the last layer. Bake at about 350° for 10 minutes. Fluff up one egg (fork or blender or Magic Bullet) and pour a bit into each cup and bake about 15 minutes longer.


Okay now for today's amazing breakfast which kicks off our Whole Thanksgiving. Call it Paleo, call it Whole30, or just call it good food. The plan is Whole30 with shredded cheese and organic ketchup sweetened with agave added. That sort of makes it not Whole30, but you get the idea. Stocking up on vegetables as we speak. 
My favorite - asparagus cooked with the pancetta, then scrambled eggs with a touch of shredded asiago. Add a smidgen of ketchup and you get a 5 thumbs up from me!


I didn't feel like cooking, so I toasted up 2 plantain cakes and tore them to bits, then added some peaches and their juice. It was pretty good!
